The oil you cook with is very important if you are concerned with your health.

When oil is overheated its chemical structure is altered and it can result in harmful compounds being formed.

Olive oil is a common oil used to cook in the household. Olive oil has many health benefits, extra virgin oil being the best option. It contains, vitamins, nutrients and antioxidants.

However when heated it can lose nutrients, change structure and it loses taste. For full benefits of olive oil use it at room temperature as a salad dressing for example. It should also be kept away from air and light exposure. If you are going to cook with olive oil then make sure heat is kept to a minimum, be patient and just wait a little longer for it to cook.

Many vegetable oils are genetically modified and are high in omega-6 which competes with omega-3 and should be avoided.

I currently cook with coconut oil. It has a high smoke point which makes it great for frying up food in a pan.

As well as this it has many benefits
– helps with digestion (contains fats with anti-microbial propertieswhich help eliminate parasites, bacteria and other causes of indigestion)
– helps the body absorb nutrients, vitamins, minerals and amino acids.
– healthy for the heart.

My advice is

1) Go and spend £6 on coconut oil, it will last a long time, has many benefits and tastes great.

2) Use extra virgin olive oil at room temperature.
